God’s Favor…Part 1

I discovered the concept of God’s Favor about 2 years ago while listening to Joel Osteen. The concept was foreign and not in alignment with my Lutheran upbringing. I mean who in their right mind would ask God directly for something? In return you all you needed to be grateful for all the wonderful gifts God has provided in your life!?!? Craziness!

For the last 6 months I had been struggling at my brick and mortar job. I felt hallow, not fulfilled and needing something more. It was to the point that it was affecting my health and family life. 

I began looking for a new job and praying for God to shine his favor on me. 

After months of searching and what felt like endless interviews, I landed a job. However, something didn’t feel right. I wasn’t jumping for joy, I wasn’t sharing the news everywhere, I was very cautious. Long dramatic story cut short, the company pulled their offer after I tendered my resignation. I was about to be jobless. 

A normal reaction would have been shear panic, not gonna lie I did initially go there, but I immediately had a sense of calmness wave over me. 

I KNEW I would be alright, this is where it gets amazing! 

I got a job offer within 2 days of leaving my previous job and actually had to turn down other interview offers.  

Next, My husband’s grandmother entered the final stages of hospice. I was able to travel back home and be with his family and help with the funeral preparations and not worry about missing work. My new employer held my job an extra week so I could travel to be with family. 

Next, my husband magically got OT and hazard pay to help offset the income loss. 

Finally, today I got a piece of mail offering to settle an old debt. The amount matched the amount of money I had saved up. 

Seriously, I couldn’t make this stuff up! God is truly amazing. 

I still feel calm and collected and I believe that this wave of Favor is just beginning and I can’t wait to see and share the next chapter as it unfolds.

Mayo I Have Crab Cakes Please….

I don’t just like seafood, I LOVE seafood. So when I went to Costco and found some crab, I was like, this mamma has to make some crab cakes. LOL I had been hoarding this Paleo Crab Cake Recipe I found online, so I was stoked.

Again, super lazy Lena here, I didn’t want to make my own Whole 30 Mayo. I have already conquered that beast and frankly it was kinda anticlimactic. I also live in Redneckville Oregon, where they REALLY try to have healthy options, but continue to lack in so many departments. So, my good pals at amazon.com it was!

I had heard amazing things about the Primal Kitchen line of products. I was surprised that that May was:

  • Primal & Paleo Approved
  • Sugar Free
  • Soy & Canola Free
  • Dairy Free
  • Gluten & Dairy Free

The consistency was perfect, not too runny or thick. Flavor was spot on. It held up to the frying process. I definitely couldn’t tell that this wasn’t the “traditional” stuff.

I have to admit the only complaint I have was the size/cost ratio, but then again, we are currently a Dave Ramsey family, so I tend to be tight with my money!

Overall, this is an amazing food product, that you can have shipped directly to your home AND it is healthy for the family!

R2D1 – No This Isn’t A Star Wars Post

So this isn’t a Star Wars thing. This is a healthy venture down the Whole 30 Lane.

Most people think fad diet when they hear Whole 30, but in reality it is an elimination diet to help you figure out what foods are triggers for you. It pretty amazeballs, bonus is that you do tend to slim down. I have done this before and had awesome results and like a dingle fritz I went back to my unhealthy ways. sigh.

So today I dedicate this post to my favorite dish, Zesty Lime Shrimp Avocado Salad by Skinny Taste. Trust me, you won’t be sorry.

P.s. Unless I am super motivated don’t expect me to post step by step instructions for recipes, I mean why reinvent the wheel when it’s already done. LOL
